I was looking into adding a digital thermocouple but I have no experience with soldering or electronics so I'd like to avoid the modifications to the fan and heat element if at all possible. Is there any way to control or elongate heat gain without extensive modifications? Most people control this by adding thermocouples and separating the wires for the fan and heat control. Most people are reaching first crack in 7 minutes but I'm reaching second crack, with an extension cord, within 5. After doing some research, I learned that most of development or origin flavors and characteristics is before first crack and that my roasts are getting up to temperature way too fast. I've done about 4 roasts in my Nostalgia over the past year, mostly because I feel like I don't get that good of roasts even if I achieve what seems to look like a good medium or light roast.
